- Stir in the cooked rice and serve. Top with grated Parmesan cheese, if desired.

- 3 cups cooked red beans or 2 (15-ounce) cans red beans, rinsed and drained
- 1/2 cup water
- 1 (15-ounce) can diced tomatoes
- 2 cups cooked long grain white rice
Directions:
- Cook rice according to package instructions.
- In a large stock pot, heat the oil over medium heat. Add the sausage, garlic, pepper, onion, and celery. Break sausage into bite-sized pieces as it cooks. Stir until sausage is cooked all the way through and vegetables are tender.
- Add the seasoning, beans, water, and tomatoes. Mix well with the sausage. Bring to a boil.
- Reduce to a simmer and cook for about 10 minutes. Serve over hot, cooked rice.

- Add the rice and cook for about two minutes, stirring constantly, so as not to burn.
- Add the water, spices, beans, corn, and tomatoes. Bring to a boil.
- Reduce to a simmer, cover, and cook for 20 minutes.

Directions:
- In a 13×9 baking dish, combine all of the ingredients, except the cheese.
- Cover with foil and bake at 300 degrees for 1 hour and 10 minutes.
- Remove from oven and carefully remove foil. Spread the cheese over the beans mixture and bake for an additional 20 minutes.

1 1/2 pounds 80% lean ground beef chuck
Kosher salt and freshly ground pepper
8 thin slices cheddar cheese (optional)
4 soft sesame buns, split
Bibb lettuce and sliced tomato, for topping
Directions
Sprinkle the ground beef evenly with 1/2 teaspoon salt in a large bowl. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
Preheat a grill to high. Season the patties with salt and pepper. Grill, undisturbed, until marked on the bottom, 3 to 5 minutes. Turn and grill until the other side is marked and the patties feel firm, 3 to 5 more minutes; if desired, top each burger with 2 slices cheese during the last 2 minutes of cooking and cover with a disposable aluminum pan to melt.
Serve the patties on the buns; top with lettuce and tomato.

Garden Veggie Pizza Squares
Directions
- 1 (8 ounce) packagerefrigerated crescent rolls
- 1 (8 ounce) package cream cheese, softened
- 1 (1 ounce) package Ranch-style dressing mix
- 2 carrots, finely chopped
- 1/2 cup chopped red bell peppers
- 1/2 cup chopped green bell pepper
- 1/2 cup fresh broccoli, chopped
- 1/2 cup chopped green onions
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Roll out crescent rolls onto a large non-stick baking sheet. Stretch and flatten to form a single rectangular shape on the baking sheet. Bake 11 to 13 minutes in the preheated oven, or until golden brown. Allow to cool.
- Place cream cheese in a medium bowl. Mix cream cheese with 1/2 of the ranch dressing mix. Adjust the amount of dressing mix to taste. Spread the mixture over the cooled crust. Arrange carrots, red bell pepper, broccoli and green onions on top. Chill in the refrigerator approximately 1 hour. Cut into bite-size squares to serve.

Cornmeal(1can )(13.8 oz) Pillsbury® refrigerated classic pizza crust or 1 can (11 oz) Pillsbury® refrigerated thin pizza crust (1can) (8 oz) pizza sauce 1/2 cup sliced pepperoni(1cup) shredded mozzarella cheese (4 oz)1tablespoon grated Parmesan cheese

1.If using classic crust: Heat oven to 425°F. Sprinkle cornmeal on 12-inch square pizza stone. Unroll dough on pizza stone. Starting at center, press dough into 12-inch square, forming 1/2-inch rim. If using thin crust: Heat oven to 400°F. Spray or grease 15x10-inch or larger dark or nonstick cookie sheet. Sprinkle cornmeal on cookie sheet. Unroll dough on cookie sheet. Starting at center, press dough into 15x10-inch rectangle.
2.Spread pizza sauce over crust to within 1/2 inch of edges. Top with pepperoni and mozzarella cheese. Sprinkle with Parmesan cheese.
3.Bake classic crust 14 to 18 minutes, thin crust 8 to 12 minutes, or until crust is golden brown. Cut into 4 servings.
